Jollof rice, is a rice dish from West Africa. The dish is typically made with long-grain rice, tomatoes, onions, spices, vegetables and meat in a single pot, although its ingredients and preparation methods vary across different regions.

Every West African country has at least one variation of Jollof rice, and it both divides and unites the region. With its seductive aroma, deep-red colour and spicy flavour, Jollof rice is the undisputed queen of West African kitchens. Jollof is smoky and spicy, with a hint of sweetness from the tomatoes. Thanks to the herbs and seasonings, it really does have multiple layers of flavor. The exact ingredients vary: Some people use seasoning cubes like Maggi or Knorr, while others omit bell peppers and use only tomatoes.

Haven said the above its up to BFEG judges to decide who cooked the best Jollof Rice. Over this competition has been between Africa countries, but this year BFEG Black History team has decided to open it up to all because Jollof Rice is now every one variety rice dish.
